Deer Stroganoff for dinner.

It has rained so much today I just could not bring myself to go fishing. emoRain Thought I would do one of my other addictions today, cooking! emoBigsmile Looked in the freezer and saw some deer round steak from this past season. Thought some good ol' deer stroganoff would really sound good today.

Take your deer round and cut it into small slices about two inches long and not more then about an 1/8th to a 1/4th inch thick. Now get you your favorite flour, dump it into a large mixing bowl, add pepper, garlic, cayenne and a little Creole to taste. Now take the deer slices and dump them into the flour mix. Just get the ol hands in there and mix it all up coating the slices really well.

Get your deep frying pan and put a fair amount of grease into it so it will almost cover all the meat. Heat it up to a nice steam and drop the deer into it. Before you turn it make sure it is starting to brown or you will knock off the coating. Once it is nice and brown take it out and let it drain. Mine kind of looks dark in the pictures because my wife makes me use wheat flour. emoRolleyes It is suppose to be better for you.

While that drains, take out of the frying pan most of the grease leaving enough to just cover the bottom of the pan. Now dump about five or six heaping table spoons of the left over coating you have in your mixing bowl and let it brown for a couple minutes. Now take a large glass of water, pour it into the pan and mix it. Don't have your pan too hot or it will be lumpy. You are making a smooth water gravy. Stir it until the flour dissolves and the gravy starts to thicken.

Now take you a 4 oz. can of sliced mushrooms and the juice, dump it into the gravy. Stir well and mix it. Now take your drained fried deer and dump it back into the pan in the gravy. Mix it all up really well and let it simmer. The longer it simmers the more tender the deer will become. emoThumbsup

You can put this on rice or noodles. I like mine on rice. Make your rice as the directions says to do, put a good helping of rice on your plate, with a generous portion of your deer stroganoff on top. emoHungry I have mine usually with a veggie and some sliced cantaloupe. emoUpsmile I hear that. I pigged out! I had two helping like that. Finch, I only downed two deer last season which is what it just about takes to keep me in deer most of the summer. I have two ice chests waiting empty to take my deer in the freezer to AR with me. Rest assure, if I had too much I would call you. emoBigsmile Jmax
