Deer steak Casserole

Ok, everyone who deer hunts has fried deer steak by now. This takes it one step further to a casserole dish. Great for company or just when you want to have it special.

6 Cubed deer steaks
1 cup rice of your choice, Uncle Ben's wild rice is best but wife makes me use brown rice.
1 Onion chopped
1/2 cup of butter
1/4 cup of flour
small can of mushrooms sliced
1 & 1/2 cup of milk.
1 T spoon of chopped parsley
1 and 1/2 t spoons of pepper
1 package of slivered almonds

Prepare rice as per instructions on package. While the rice is cooking fry your deer steaks as you would normally but leave at medium rare. (Don't overcook them.) In a deep skillet, melt butter, sauté chopped onions in butter and stir in flour. Add mushrooms and their liquid. Add milk, parsley, salt to taste and pepper. Add rice.

Now in a greased casserole dish place the fried deer steaks evenly in dish and pour the mixture on top covering the steaks. Now sprinkle almonds all over the top and bake at 350 for about 25 minutes. emoHungry It shows a knife in those pictures but the steak was so tender you could cut it with the fork.
